Fresh lemons are so nice to have around, but what are you to do when the reality of managing those lemons clashes with the idea? Moldy lemons are finally no longer a staple in my kitchen. Once I notice they may be nearing retirement, I simply squeeze them out, and pour the juice into ice cube trays. It is important to measure the approximate volume of what the cubes will be, so that at a later date you can easily calculate what you need. Remember also, to label the bag you put them in, and how many TBS are in the cubes, so that you don’t inadvertently grab what you think is a bag of frozen chicken stock, only later to discover that lemon juice went into the fresh home made chicken soup you made for your ailing daughter…
