This is delicious and perfect for trying different combinations of fruit. I use anything that happens to sound good at the time. Sometimes they turn out great, other times not so great… I always learn something, even if it is simply “I am definitely not making that one again.” Have fun and experiment!

  • 5 cups fruit of your choice… peeled and sliced apples, peaches, orĀ  pears as well as your favorite berries. Peach and pear both go nicely with blueberries, and a mixture of berries also works well.
  • 2-4 TBS pear/pineapple sweetener
  • 3 TBS instant tapioca
  • 1/2 cup rolled oats
  • 1/2 cup coconut sugar
  • 1/4 cup wheat free flour blend
  • 1/4 tsp. ground nutmeg, ginger, or cinnamon.
  • 1/4 cup buttery spread
  • 1/4 cup chopped nuts or unsweetened coconut
  1. Thaw fruit if frozen. Do not drain. Mix with sweetener and tapioca, and pour into a 2 quart baking dish.
  2. Combine oats, coconut sugar, flour, and nutmeg. Cut in “butter spread” until mixture resembles coarse crumbs. Stir in nuts and/or coconut. Spread over top of fruit.
  3. Bake in 375 F oven for 30-35 minutes, or until fruit is bubbling, and top is golden. Cool slightly, and enjoy! I serve this to other members of the family with a dollop of freshly made whipped cream, and guests love it!
