This family favorite is incredibly easy to make for a quick dinner as well as large family gatherings. The technique is simple and can easily be used with other fresh vegetables such as spring asparagus and peas. After I wash, trim, and drain the vegetables, I place them in the refrigerator in a plastic bag for later use or saute them immediately. My family prefers them slightly crunchy which usually takes about 10-15 minutes.

 

The recipe is simple-

  1. Fresh vegetables washed, trimmed, and drained
  2. Olive oil for sauteing
  3. Fresh cloves of grated garlic
  4. Salt and pepper

Add the desired amount of beans to the pan along with enough oil to adequately coat the vegetables. Saute on medium heat until they are cooked to desired crunchiness. Add grated garlic, continuing to stir so the garlic does not burn. Season well (part of the secret) with salt and freshly ground pepper and enjoy!
