This cake has a pleasant chocolate flavor that is reminiscent of a “light brownie.” Milk, nuts, and oil can easily be modified for individual preference. I make it with wheat when I want a wonderful brownie-like cake. Great recipe!
- 1 cup wheat free flour blend
- 1 cup coconut sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/4–1/2 cup chopped walnuts
- 3/4 cup rice milk or coconut milk
- 1/3 cup vegetable oil
- 1 tsp. almond or vanilla extract
- 1 egg
- GreaseĀ pan
- In large mixing bowl, whisk together flour blend, coconut sugar, cocoa powder, baking soda, baking powder, salt, and nuts.
- In separate bowl, whisk eggs. Add milk, oil, and almond flavoring.
- Add wet mixture to dry ingredients, stirring until thoroughly mixed.
- Pour batter into greased 9×9 pan. Smooth the top, and gently tap pan on counter to release air bubbles.
- Bake in 350 F oven for 20-30 minutes or until toothpick inserted near center comes out clean, being careful to not overbake. Cool and enjoy!
