This cake has a pleasant chocolate flavor that is reminiscent of a “light brownie.” Milk, nuts, and oil can easily be modified for individual preference. I make it with wheat when I want a wonderful brownie-like cake. Great recipe!

 

  • 1 cup wheat free flour blend
  • 1 cup coconut sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4–1/2 cup chopped walnuts
  • 3/4 cup rice milk or coconut milk
  • 1/3 cup vegetable oil
  • 1 tsp. almond or vanilla extract
  • 1 egg
  1. GreaseĀ  pan
  2. In large mixing bowl, whisk together flour blend, coconut sugar, cocoa powder, baking soda, baking powder, salt, and nuts.
  3. In separate bowl, whisk eggs. Add milk, oil, and almond flavoring.
  4. Add wet mixture to dry ingredients, stirring until thoroughly mixed.
  5. Pour batter into greased 9×9 pan. Smooth the top, and gently tap pan on counter to release air bubbles.
  6. Bake in 350 F oven for 20-30 minutes or until toothpick inserted near center comes out clean, being careful to not overbake. Cool and enjoy!
