Maple Pecan Popcorn

  • 1 cup chopped pecans
  • 10 cups unsalted popcorn
  • 4 1/2 TBS butter OR buttery spread
  • 1 1/2 cups pure maple syrup (I buy from Costco)
  • 1/2 tsp salt
  • candy thermometer
  • large shallow baking pan covered with lightly oiled aluminum foil
  • wooden spoon lightly oiled
  1. Toss nuts and popcorn in large metal bowl.
  2. Melt “butter” in 1-1/2 quart non-stick sauce pan over moderate heat. Add syrup and salt. Boil without stirring until mixture registers 300 F on thermometer. Time varies, but usually about 20-30 minutes.
  3. Pour the HOT HOT HOT mixture over nuts and popcorn, stirring briskly with oiled spoon until popcorn is coated. Immediately spread popcorn in baking pan to cool.

Store in glass containers or cellophane bags for freshness. Enjoy!
