I was reluctant to mix my own flour blend. It seemed so much simpler to buy it at the store. However, this recipe is actually very easy, and economical as well. Specialty flour blends can be costly. All of these ingredients are available from Bob’s Red Mill.

  • 2 cups rice flour–white or brown
  • 2/3 cups potato starch
  • 1/3 cups tapioca flour
  • 1 1/2 tsp. xanthan gum

Whisk together and enjoy. It can be substituted for wheat in most recipes. I have not yet tried it with yeast based recipes.
