For no particular reason, I don’t make this very often but when I do it never lasts long. Plain yogurt with fresh or frozen fruit and granola on top–oh my, it is amazing! I used to quietly snicker when people would extol the virtues of yogurt and fruit “Oh it’s so good, it’s just the most delicious dessert… ” I chuckle no more, except at myself and how much I have changed. Good plain yogurt (they all don’t taste the same) and fresh picked berries with homemade granola is a satisfying treat. Granola paired with non dairy milk works as well. A friend of mine requested I post this recipe knowing it would be different than what is available in the store. I know it is cheaper and based on my children and grand children’s enjoyment of it, I would say it beats the competition. This is a wonderful recipe that allows you to experiment with ingredients based on preferences or dietary restrictions.

 

  • 2 cups old fashioned oats
  • 1 cup chopped unsalted nuts–almonds, walnuts, hazlenuts, pecans, etc.
  • 1/2 cup unsweetened flaked coconut
  • 1/2 cup unsalted seeds–sunflower, pumpkin, etc.
  • 1/2 cup real maple syrup or honey
  • 2 TBS vegetable oil
  1. In large bowl combine oats, nuts, coconut, and seeds.
  2. Mix honey and oil, thoroughly stir into mixture.
  3. Spread evenly on baking sheet.
  4. Bake at 300 F for 30 minutes, or until lightly brown, stirring every 10-15 minutes.
  5. Optional–After removing from oven, stir in 1 cup unsweetened dried fruit.

This recipe doubles easily and stores nicely in an airtight container.
